This coconut AIP smoothie recipe has saved my mornings.
When you are eating autoimmune paleo which I will shorten to AIP diet, it can seem overwhelming because it can be restrictive.
It’s important to get those vegetables in your meals whatever way you can.
The autoimmune paleo diet is about eliminating dairy, eggs, nightshades, grains, and nuts to give the body time to rest and recover.
Autoimmune paleo diet helps to reduce symptoms like chronic pain, Lupus, Hashimoto’s thyroiditis, leaky gut, and migraines.
You don’t want to give any reason for the immune system to ramp up and this coconut AIP smoothie recipe delivers nutrition without triggering any reactions.
Coconut AIP Smoothie
This smoothie uses canned coconut milk as the fat and liquid. When you open up a can of coconut milk, the cream will have risen to the top and the coconut water will be at the bottom.
I use half of the cream and half of the water and put the can in the fridge. You could use the entire can if you are sharing the smoothie with someone or want extra.
Having a high powered blender is helpful to make sure you don’t get chunks of kale in your smoothie. Trust me, you don’t want chunks of kale.
This Vitamixblender is the cream of the crop and you will never need another blender…ever.
Blend until smooth, if smoothie is too thick you can add a small amount of water to thin it out.
Notes
This AIP smoothie can be changed quite easily by adding in a different frozen fruit and switching out the kale for a different green such as turnip or mustard greens.
I prefer canned better but you could use coconut milk in the carton if you read the ingredients and it is a clean brand. You just want the ingredients to say coconut milk and nothing else.
