I know that I have been recently obsessed with leftover Thanksgiving turkey recipes.  There was the Asian style turkey meatballs, the leftover turkey lemon garlic soup, and now this leftover turkey stir fry!

Why You’ll Love This Leftover Turkey Teriyaki Stir Fry:

I’m just obsessively trying to find tasty ways to eat up those Thanksgiving feast leftovers of yours because if you are anything like me… you will have too many leftovers and not enough patience to eat one more turkey sandwich.

So today I am talking all about the leftover turkey teriyaki stir-fry.

  • Give yourself 15 minutes from start to finish.
  • Grab your leftover Thanksgiving turkey and some stir-fried veggies (or even veggies leftover from your Thanksgiving feast!), boil some water for those rice noodles, and make up your quick and sticky teriyaki sauce.

Turkey Teriyaki Pairings:

For starters, let’s put this stir fry right next to a healthy portion of Cauliflower Rice or Roasted Broccoli!

And how about some fluffy rice???

Try Instant Pot Jasmine Rice or Basmati Rice.  Or how about some healthy pressure cooker brown rice!  You will not taste a softer, more tender and fluffy brown rice than this recipe!

For a full Whole30 / Paleo meal you can use instead our cilantro lime cauliflower rice!

Ingredients:

  • Gluten-Free Pasta or rice
  • ghee
  • stir-fried veggies (broccolis, carrots, beans, spinach etc.)
  • minced garlic, divided
  • salt and pepper to taste
  • leftover cooked turkey meat
  • water
  • coconut sugar (optional)
  • liquid aminos
  • cornstarch
  • ground ginger (or better: fresh slices)

See the recipe card for quantities.

Turkey Teriyaki Directions:

  1. Cook pasta according to the package directions.
  2. While the pasta is cooking, melt the ghee in a large skillet over medium heat. Add the veggies, 1 teaspoon minced garlic, and salt and pepper, and saute until slightly tender and bright, about 2-3 minutes. Then add in the cooked turkey meat. Cook for about 4-5 minutes or until the vegetables are fully tender and the turkey meat is heated fully through.
  3. While the veggies are sauteing, make your teriyaki sauce by combining the water, coconut sugar (optional), liquid aminos, cornstarch + water, honey, ground ginger, and 1 teaspoon of minced garlic together in a medium mixing bowl.
  4. Once the skillet with the vegetable and turkey mix is completed, pour the teriyaki sauce over the skillet and stir to mix well. When the sauce starts to thicken remove the skillet from the heat (about 2-3 minutes).
  5. Place the noodles in bowls and spoon the saucy turkey teriyaki stir-fry on top of the noodles and enjoy!

Top Tips And Variations:

  • I like to use rice noodles for this recipe because they cook in 3-5 minutes and they are lighter in texture than regular noodles.  Gives the dish a fun feel.  But you can use whichever gluten free noodles you have on hand. The pasta tastes amazing covered in this glaze no matter what noodle you choose.
  • Use whichever vegetables you have on hand too.  I went to the store and bought freshly chopped stir-fry veggie mix but you can use whatever veggies you like, just make sure you chop them and they cook to at least “slightly tender”.
  • I used liquid aminos but you can use gluten-free soy sauce instead.
  • What if you don’t have leftover cooked turkey meat?  You can use any cooked meat as a replacement for the turkey, just make sure to fully cook the meat according to the package instructions.

Storage and reheating

  • You should store your leftover turkey stir fry in an airtight container in the fridge for up to 2 days after cooking.
  • But you don’t need to worry about that.  Most likely will not last that long after your family hears about how easy this dish is to reheat!
  • To reheat your turkey stir fry, simply place your desired amount of stir fry in a microwave-safe dish and microwave it covered on high.
  • Microwave times will vary because of the amount of stir fry you are reheating and how hot you like your reheats. Typically I would recommend microwaving your leftovers for between 60-120 seconds.
