Are you scared of cauliflower puree or “Cauliflower Mashed Potatoes”?
Cauliflower is so versatile and takes on the flavor of whatever you put with it and in this case, it’s cream cheese.
I am always looking for low carb meals and sides that are quick and only have a few ingredients.
This recipe is so simple to make and is absolutely delicious to eat.
Healthy food doesn’t have to be complicated and this recipe certainly isn’t.
Easy Low Carb Cauliflower Puree
I used 2 heads of cauliflower for this recipe since we are a family of 6.
If your a smaller family, simply use this opportunity to freeze your leftovers and use later in the week.
Simply chop up the cauliflower into pieces or rough cut it and break it apart with your hands. It doesn’t have to be pretty.
I place all the cauliflower into a pot since I don’t have a steamer. Add a little water to the bottom to produce steam but not enough to cover the cauliflower. I don’t want to drain mine, I hate that extra step.
I add a few cloves of garlic because I love the taste and it’s antibacterial and antifungal properties.
Simmer or steam until its tender and ready to mash. It only took about 10-15 min for mine to soften up. If you have leftover liquid you will have to drain it or the mashed potatoes can get really runny.
This is where I add 1 block of cream cheese and butter, salt and pepper. You could also throw in some cheese if you want but it’s delicious without it.
You can blend or mash but I use a stick blender to get it very smooth and fluffy.
I personally love to put parmesan cheese on top of my cauliflower mashed potatoes but be creative, green onions would be great too.
This can be easily frozen if you end up making too much or have leftovers.
