This vegan bolognese recipe will even satisfy the meat eaters in your life. Perfect for date night, meat-free Mondays, family gatherings, or anytime you need a “crowd-pleaser”! Trust me this is the most super amazing bolognese recipe that I’ve converted!
You’ll probably be as skeptical as I was in the beginning, but try it and you’ll be amazed! Just remember you will have to soak it for an hour before you start cooking.
It is meant to be spaghetti bolognese, but I discovered after “seeing” spaghetti in the pantry ALL weekend that it was actually tagliatelle. Doesn’t matter, but it was a bit of a disappointment. For a healthier option you could have it with courgette noodles.
Now, you should know that this was super easy to convert (just use soy instead of mince) but what wasn’t simple was figuring out the quantities because this is the way it’s written out…
So follow this recipe with a pinch of salt! And feel free to be more or less liberal with the wine.
This sauce could be used for Pastitsio, Moussaka, Lasagne and Cannelloni. Just to name a few dishes! A crowd pleaser and it’s so versatile! What more could you want?
For a veggie packed version, simply saute some veggies after your onions are translucent! I have cooked in courgettes, mushrooms and peppers before – and left out the soy, but that you can decide. At least if you have veggies and soy you might get more meals out of it. That will save you time because you will definitely want more of this meal!! I made it 3 days ago and I already want to recreate it!
Enjoy and let me know in the comments if you’ve made this recipe! I’d love to hear your feedback and see photos!
