Air fryer roasted potatoes are then tossed with a delicious home made pesto sauce. Originating in Genoa, northern Italy, this green sauce is one of the most popular sauce in the world. While the traditional ingredients are fresh basil, extra virgin olive oil, garlic, pine nuts, parmesan cheese and coarse salt, pesto sauce still tastes delicious without the cheese.
HOW TO MAKE AIR FRYER PESTO POTATOES
STEP 1: Cube potatoes
Start by cubing a pound of gold or red potatoes. Place them in a large bowl and toss them with olive oil, salt, and pepper until evenly coated.
Preheat your air fryer at 400 degrees for 3 minutes and pour the potatoes into the air fryer basket. Preheating the air fryer before adding the potatoes allows them to get ultra crispy.
STEP 2: Air fry potatoes
Air fry the potatoes at 400 degrees for 25 minutes and pause the air fryer halfway through the time to shake the basket or toss the potatoes with tongs.
After the 25-minute timer goes off, check the potatoes for doneness. If you want your potatoes more crispy, air fry for another 5 minutes.
STEP 3: Make dairy free pesto
While the potatoes are frying, start making the delicious creamy garlic pesto. Combine the basil, spinach, garlic, pine nuts, sea salt, and olive oil in a food processor. Process the pesto until a smooth paste has formed.
STEP 4: Toss with pesto
After the potatoes are crispy to your liking, toss them with 2-3 tablespoons of dairy-free pesto. You can also use store-bought pesto if your short on time, but it doesn’t compare to the flavor explosion you get from making fresh pesto!

1 pound gold baby potatoes or red baby potatoes, diced into cubes
Toss diced potatoes in a large bowl with olive oil, sea salt, and black pepper until evenly coated. Preheat the air fryer at 400 degrees for 3 minutes. Once the timer goes off, place the potatoes into the air fryer basket. Air fry at 400 degrees for 20-25 minutes, pausing to shake the basket half-way through.
Once potatoes are crispy on the outside and tender on the inside (time will depend on type of air fryer, 25 minutes is the perfect time for my Ninja air fryer), transfer potatoes to a serving tray or bowl and toss with the pesto.
