Ingredients

Units Scale
  • For the Curry:
  • 1 tablespoon coconut oil (or olive oil)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated (or 1 teaspoon ground ginger)
  • 2 tablespoons Thai red curry paste (Thai Kitchen brand is vegan and widely available)
  • 1 (13.5 oz) can full-fat coconut milk
  • 1/2 cup vegetable broth (low sodium)
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1 medium red bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1 medium carrot, peeled and thinly sliced
  • 2 cups baby spinach
  • 1 tablespoon coconut aminos (or gluten-free soy sauce / tamari)
  • 1 teaspoon maple syrup (balances the heat)
  • Juice of 1 lime
  • Sea salt and black pepper, to taste
  • To Serve:
  • 3-4 cups cooked basmati rice (or cauliflower rice for a lower-carb option)
  • Fresh cilantro, chopped
  • Sliced green onions
  • Lime wedges

Instructions

  1. Heat coconut oil in a large skillet over medium heat. Add diced onion and a pinch of salt. Cook 4–5 minutes until soft and translucent.
  2. Add garlic and ginger. Cook 30 seconds until fragrant.
  3. Add red curry paste and stir into the onion mixture. Cook 1 minute, letting the paste toast in the oil.
  4. Add bell pepper, broccoli, and carrot. Stir to coat in the curry paste and cook 2–3 minutes.
  5. Pour in coconut milk and vegetable broth. Add chickpeas, coconut aminos, and maple syrup. Season with salt and pepper. Stir well and bring to a gentle boil.
  6. Reduce heat and simmer uncovered for 10–12 minutes, stirring occasionally, until vegetables are tender and sauce has thickened slightly.
  7. Stir in baby spinach and cook 1–2 minutes until wilted. Squeeze in lime juice and taste for seasoning.
  8. Serve over basmati rice and garnish with cilantro, green onions, and lime wedges.

Notes

  • Use full-fat coconut milk for the creamiest sauce.
  • To make it spicier, increase to 3 tablespoons of curry paste or add a pinch of red pepper flakes.
  • Swap chickpeas for cubed pan-fried tofu, white beans, or lentils.
  • Store leftovers in the fridge for up to 5 days or freeze for up to 3 months.
  • For a lower-carb option, serve over cauliflower rice.
