Description

This vegan French toast casserole is custardy inside, crisp on top, and finished with a maple pecan crumble. Gluten-free, dairy-free, egg-free, and easy to make the night before.

Ingredients

Units Scale

Casserole

  • 1 lb (450g) sturdy gluten-free bread, cut into 1-inch cubes (about 8 cups)
  • 2 cups unsweetened almond milk
  • 1/4 cup pure maple syrup
  • 3 tablespoons cornstarch or arrowroot powder
  • 2 teaspoons ground cinnamon
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon black salt (kala namak), or 1/4 teaspoon fine sea salt
  • Coconut oil, for greasing

Pecan crumble

To serve (optional)

  • Fresh strawberries and blueberries, coconut yogurt, maple syrup, powdered sugar

Instructions

  1. Preheat the oven to 300°F. Spread the bread cubes on a sheet pan and bake for 12–15 minutes, until dry to the touch but not browned.
  2. In a large bowl, whisk the almond milk, maple syrup, cornstarch, cinnamon, vanilla and salt. Rest 5 minutes, then whisk again.
  3. Grease a 7×11-inch (2-quart) baking dish. Add the bread cubes, pour the custard evenly over the top and gently press the bread down so every piece is coated. Soak at least 30 minutes, or cover and refrigerate overnight.
  4. Preheat the oven to 350°F. In a small bowl, combine the almond flour, pecans, coconut sugar, cinnamon and salt. Drizzle in the melted coconut oil and rub together until crumbly.
  5. Sprinkle the crumble over the casserole. Bake uncovered for 35–40 minutes (add 5 minutes if baking from the fridge), until golden and no liquid pools at the bottom. Tent with foil for the last 10 minutes if the top browns too fast.
  6. Cool 10 minutes. Serve warm with berries, coconut yogurt and maple syrup.

Notes

  • Bread: Many gluten-free breads contain eggs. Check the label to keep it vegan.
  • Make ahead: Assemble through step 3 the night before; make the crumble right before baking.
  • Pan size: A 9×13-inch dish works too; the casserole will be thinner and bake about 5 minutes faster.
  • Storage: Refrigerate covered up to 4 days or freeze portions up to 2 months.
  • Nut-free: Use gluten-free oat flour and pumpkin seeds in the crumble.
  • Prep Time: 20 minutes (30 minutes sock time)
  • Cook Time: 50 minutes (15 toast + 35 bake)
