Scale
- Pasta:
- 12 oz (340g) pasta of choice (gluten-free fusilli, penne, or rigatoni recommended)
- Salted water for boiling
- 1/2 cup reserved pasta water
- Spinach Tofu Sauce:
- 1 block (14 oz / 400g) silken tofu, drained
- 4 cups fresh spinach
- 4 cloves garlic, minced
- 1/2 medium yellow onion, diced
- 2 tablespoons olive oil
- 3 tablespoons nutritional yeast
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- To Serve:
- Fresh basil leaves
- Extra nutritional yeast or vegan parmesan
- Cracked black pepper
- Drizzle of olive oil (optional)
Instructions
- Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve ½ cup pasta water before draining. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add diced onion and a pinch of salt. Cook 4 minutes until soft. Add garlic and red pepper flakes; cook 1–2 minutes until fragrant. Add spinach in batches and stir until completely wilted, about 2–3 minutes.
- Transfer the spinach mixture to a blender. Add silken tofu, nutritional yeast, lemon juice, salt, black pepper, and ¼ cup of the reserved pasta water. Blend on high until completely smooth. Taste and adjust seasoning.
- Pour the sauce back into the skillet over medium-low heat. Add the cooked pasta and toss to coat. Simmer 2–3 minutes. Add more pasta water as needed to loosen the sauce.
- Divide into bowls and garnish with fresh basil, nutritional yeast, black pepper, and a drizzle of olive oil.
Notes
- Storage: Refrigerate in an airtight container for up to 4 days. The sauce may thicken — add a splash of water when reheating.
- Freezing: Freeze the sauce (without pasta) for up to 2 months. Thaw overnight in the fridge and re-blend before using.
- Tofu tip: Silken tofu is essential for a smooth, creamy sauce. Do not substitute firm or extra-firm.
- Gluten-free: Use certified GF pasta to keep this recipe fully gluten-free.
- Frozen spinach: Thaw completely and squeeze out all excess water before using.
