Instructions

  1. Preheat. Heat the oven to 350°F with a rack in the center position.
  2. Make the crust. Whisk the almond flour, tapioca flour, and salt in a medium bowl. Add the coconut oil, egg, and 1 tsp maple syrup. Mix until a cohesive dough forms.
  3. Press and par-bake. Press the dough evenly into the bottom and up the sides of a 9-inch pie dish. Prick the base with a fork. Bake 12–14 minutes, until the edges are lightly golden. Set aside.
  4. Boil the syrup. In a medium saucepan over medium heat, bring the 1 cup maple syrup to a full rolling boil with bubbles across the entire surface. Boil exactly 5 minutes, then remove from heat. Do not shorten this step or the pie will not set.
  5. Add sugar and fat. Off the heat, whisk in the coconut sugar and 3 Tbsp coconut oil until dissolved. Let cool 5 minutes, until warm rather than hot.
  6. Temper the eggs. Whisk the tapioca flour into the beaten eggs. Whisking the syrup constantly, pour the egg mixture in a slow, thin stream. Whisk until smooth and glossy, then stir in the vanilla and salt.
  7. Fill the crust. Scatter the 1 cup chopped pecans over the par-baked crust. Pour the filling over the top.
  8. Top the pie. Arrange the remaining 1 cup pecan halves on the surface in your preferred pattern. Don’t press them down.
  9. Bake. Set the pie on a baking sheet and bake 35–40 minutes, until the surface is set and puffed with only a slight wobble at the very center. Tent with foil if the crust or pecans brown too quickly.
  10. Cool completely. Cool on a wire rack at least 3 hours before slicing. The filling continues to set as it cools. Chill an additional hour for the cleanest slices.

Notes

  • Setting issues? The number one cause of a runny pecan pie is under-boiling the maple syrup. Time it.
  • Pie dish matters. Light-colored ceramic, glass, or metal is ideal. Dark metal pans can scorch the almond flour crust. Glass and ceramic may need 3–5 extra minutes.
  • Make-ahead: Bake up to 2 days ahead and refrigerate, or freeze the whole pie up to 3 months. Thaw overnight in the fridge.
  • Store-bought crust: Works fine, but most gluten-free crusts contain rice flour or starch, so the pie is no longer strictly paleo.
  • Eggs are required. Flax or chia eggs will not set this filling.
