Refined sugar free, dairy free, and vegan too!
Ingredients
Dry ingredients:
- 1 cup sprouted quick oats or old fashion oats (gluten free, organic)
- 1/3 cup ground flax seed
- 1/2 cup dark chocolate chips (organic, dairy free)
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
Wet ingredients:
- 1/3 cup almond butter, creamy
- 3 tablespoons of pumpkin puree
- 1 1/2 tablespoons maple syrup
- 1 teaspoon vanilla
Instructions
1. In a medium sized bowl, add the dry ingredients: oats, ground flax seed, dark chocolate chips, cinnamon and nutmeg. Mix ingredients until well combined.
2. Add the wet ingredients: almond butter, pumpkin puree, maple syrup and vanilla. Mix ingredients until well combined.
3. Roll the mixture into balls, or use a cookie scoop to form balls. (Mine were about 1″ in diameter). Enjoy immediately or place balls into fridge for 30 minutes to 1 hour for the bites to set.
4. Store in an airtight glass container in the fridge or freezer. Makes about 18-22 balls.
Notes
- Storing: Store in glass tupperware container, reusable bag, or bee’s wax wrap.
- Tips: If mixture is sticking to your hands, put in the fridge for 30 minutes to 1 hour. Then take the mixture out and roll into balls.
- If mixture is too dry, add in more almond butter (or nut butter of your choice).
- If you have a hand held mixer, you can also use that to combine the mixture. Use on low.
