Ingredients

Units Scale
  • Potatoes
  • 4 medium russet potatoes, scrubbed
  • 1 tablespoon avocado oil
  • 1/2 teaspoon sea salt
  • Filling
  • 2 tablespoons olive oil, divided
  • 4 cloves garlic, minced
  • 1 small yellow onion, finely diced
  • 16 oz cremini or baby bella mushrooms, sliced
  • 4 cups fresh baby spinach
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh flat-leaf parsley for garnish

Instructions

  1. Preheat oven to 425°F. Pierce, oil, and salt potatoes. Bake directly on rack for 45–55 minutes until fork-tender with crispy skin.
  2. Heat 1 tablespoon olive oil in a large skillet over medium heat. Sauté onion for 3–4 minutes. Add garlic and cook 60 seconds more.
  3. Add remaining olive oil and increase to medium-high heat. Add mushrooms in a single layer and cook undisturbed for 3–4 minutes until golden. Stir and cook another 3–4 minutes. Season with salt, pepper, and red pepper flakes.
  4. Add spinach in handfuls and toss with mushrooms. Cook 2–3 minutes until fully wilted. Remove from heat and add lemon juice. Taste and adjust seasoning.
  5. Once potatoes are done, let cool 2–3 minutes. Slice lengthwise, fluff interior with fork, and season interior with sea salt.
  6. Spoon filling generously into each potato. Garnish with fresh parsley and an optional drizzle of olive oil. Serve immediately.

Notes

  • For crispier skin: bake directly on the oven rack, not a sheet pan.
  • Don’t crowd the mushrooms — cook in two batches if your skillet is small.
  • Store filling and potatoes separately in fridge for up to 4 days.
  • For air fryer version: air fry at 400°F for 35–45 minutes, flipping halfway.
