Ingredients

Units Scale
  • 1 cup quinoa, uncooked
  • 2 cups water or vegetable broth
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 red bell pepper, diced
  • 1 English cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/3 cup dried cranberries or raisins
  • 1/4 cup sliced almonds, toasted
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 1/2 teaspoons ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cinnamon
  • 2 cloves garlic, minced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon maple syrup (optional)

Instructions

  1. Rinse quinoa thoroughly and cook with water or broth for 15 minutes. Remove from heat, let sit covered for 5 minutes, then fluff and cool.
  2. Dice bell pepper and cucumber. Chop onion and fresh herbs. Toast sliced almonds in a dry skillet for 2-3 minutes until golden.
  3. Whisk together all dressing ingredients in a small bowl. The turmeric will give it a vibrant golden color.
  4. Combine cooled quinoa, chickpeas, vegetables, and herbs in a large bowl. Pour dressing over and toss until evenly coated.
  5. Top with toasted almonds and extra cilantro. Serve immediately or refrigerate for 30 minutes to let flavors meld.

Notes

  • Turmeric can stain plastic containers; use glass for storage
  • Salad tastes even better the next day as flavors develop
