Description

This chili lime baked trout is a 25-minute weeknight dinner made with smoky chili powder, fresh lime, and tender flaky steelhead trout. One pan, five spices, and it’s Whole30, paleo, keto, gluten free, and dairy free.

Ingredients

Scale
  • 1 1/2 lbs steelhead trout fillet, skin on (about 1 large fillet)
  • 2 tablespoons avocado oil
  • Zest of 1 lime (about 1 teaspoon)
  • 2 tablespoons fresh lime juice
  • 2 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 3/4 teaspoon sea salt, divided
  • 1/4 teaspoon black pepper
  • 1 teaspoon honey (optional — omit for Whole30 and keto)
  • 2 tablespoons fresh cilantro, chopped
  • 1 lime, cut into wedges, for serving

Instructions

  1. Preheat the oven to 375°F and line a rimmed baking sheet with parchment paper. Pat the trout fillet completely dry on both sides with paper towels and place it skin side down on the prepared pan.
  2. In a small bowl, whisk together the avocado oil, lime zest, lime juice, chili powder, smoked paprika, cumin, garlic powder, and ½ teaspoon of the sea salt until it forms a loose paste. Stir in the honey, if using.
  3. Season the trout with the remaining ¼ teaspoon sea salt and the black pepper. Using a pastry brush, spread the chili lime mixture evenly over the top and sides of the fillet.
  4. Bake on the center rack for 14 to 17 minutes, until the flesh is opaque and flakes easily when pressed with a fork at the thickest point. For a thermometer, pull the fish at 135°F.
  5. Let the trout rest on the pan for 3 to 5 minutes. Top with chopped cilantro, squeeze a lime wedge over the fillet, and serve with the remaining wedges.

Notes

  • For Whole30: Omit the honey and check that your chili powder contains no added sugar or non-compliant additives.
  • For keto: Omit the honey. Each serving has approximately 2g net carbs.
  • Salmon substitution: Use a 1½ lb salmon fillet and increase the bake time to 18 to 21 minutes.
  • Rainbow trout: Thinner fillets cook faster — start checking at 10 minutes.
  • Storage: Refrigerate up to 3 days in an airtight container or freeze up to 2 months. Reheat gently at 275°F.
