Paleo Philly Cheesesteak Stuffed Peppers with Ground Beef

These paleo philly cheesesteak stuffed peppers are a low carb twist on the classic sandwich. Stuffed with ground beef, mushrooms, onions, and bell peppers, its an easy, healthy dinner everyone will love. Whole30 and Keto too!

PHILLY CHEESESTEAK STUFFED PEPPERS

Ditch the carb-heavy bread, and still enjoy your favorite Philadelphia sandwich, but with stuffed peppers! Bell peppers are the perfect low carb swap for this delicious recipe.

My fiance and I will make these for dinner and keep the leftovers for meal prep the next day. They are super easy to reheat, and they taste just as good the next day.

We love recipes with ground beef because of it’s versatility and ease. Our favorites are sloppy joes, taco skillet, and of course paleo chili.

For this ground beef stuffed bell pepper recipe you’ll need:

  • 3 Bell peppers (any color) – I used green bell peppers to resemble the classic Philly Cheesesteak, however you can use red, yellow, and orange as well.
  • 3 Garlic cloves
  • 1 Onion – Use any color onion
  • 8 oz Mushrooms – I used baby bella mushrooms for this recipe
  • 1 Red bell pepper – This bell pepper is sliced and put in the filling. You can use any color bell pepper for this.
  • Grass fed ground beef – You can also use pork sausage, ground turkey, flank steak, sirloin steak, or rib eye steak.
  • Seasonings: Garlic powder, onion powder, paprika, and parsley
  • Mayonnaise (dairy free) – I use Primal Kitchen mayonnaise. Pick a mayonnaise that has few ingredients.
  • Cheese (optional) – If you aren’t dairy free, choose a grass-fed cheese

HOW TO MAKE PHILLY CHEESESTEAK STUFFED PEPPERS WITH GROUND BEEF

Start by grabbing a cutting board and chopping the vegetables. Begin to halve the bell peppers, and pull out the ribs and seeds. Mince the garlic, slice the onion, mushrooms, and red bell pepper. Cutting the vegetables all at once save time by letting you get through the recipe faster.

Place the bell pepper halves in an glass baking dish. I used a 9×13 baking dish and the peppers fit perfectly. Bake the peppers in the oven for 30 minutes. This will soften them up a bit before stuffing them with the filling. I picked all green bell peppers, however you can use red, yellow, or orange as they are sweeter.

While the bell peppers are baking, start making the pepper stuffing. Cook the garlic, onions, mushrooms, and bell pepper in a skillet and transfer to a plate. In the same skillet, cook the ground beef.

Combine the vegetable mixture back into the ground beef skillet and fill the peppers with the ground beef mixture.

Obviously a philly “cheesesteak” isn’t complete without the “cheese”. However, if you are paleo, whole30, or dairy free you need a substitute. I topped the bell peppers with mayonnaise, broiled them in the oven until golden brown and melted, and it tasted just like melted cheese.

If you aren’t dairy free you can of course top yours with cheese. Choose a high quality grass-fed cheese.

Enjoy the peppers by themselves or on top of some mixed greens.

How to make Stuffed Peppers with Steak

To make these philly cheese steak stuffed peppers with steak choose 1 1/2 pounds of sirloin, rib eye, or flank steak. Make sure to slice the steak very thin to ensure even cooking. Cook the garlic, onion, mushrooms, and bell pepper until tender and then add the steak. Cook the steak for 3-4 minutes, and stir in the seasoning.

How to make Stuffed Peppers with Roast Beef

To make the stuffed bell peppers with roast beef, make sure to buy good quality deli roast beef. Thinly slice the roast beef and add it to the skillet after cooking the garlic, onions, mushrooms and bell peppers. Cook the beef for 8-10 minutes or until it is thoroughly cooked.

You could also eat the peppers by themselves as they are super filling with plenty of protein, and healthy fats.

Ingredients

  • 3 green bell peppers, halved, seeded and ribs removed
  • 1 tablespoon avocado oil, or olive oil
  • 3 garlic cloves, minced
  • 1 large red onion, thinly sliced
  • 8 ounces baby bella mushrooms, sliced
  • 1 red bell pepper, sliced into strips
  • 1 pound grass fed ground beef or ground turkey
  • 1 tablespoon garlic powder
  • 1/2 tablespoon onion powder
  • 2 teaspoons paprika
  • 1/2 tablespoon parsley
  • 6 tablespoons mayonnaise, optional
  • salt and pepper to taste

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Place bell pepper halves cut side up in a 9×13 baking dish, and bake for 30 minutes, or until peppers are tender.
  2. While the peppers are baking, start preparing the filling. Heat avocado oil in a large skillet over medium-high heat. Add the garlic, onions, mushrooms, and bell pepper. Cook for 3-5 minutes or until the vegetables become tender and softened. Transfer vegetable mixture to a plate and set aside. 
  3. In the same skillet, add ground beef, garlic powder, onion powder, paprika, and parsley. Cook ground beef, breaking up chunks with a spatula, until no longer pink.
  4. Combine the vegetable mixture into the ground beef skillet, then fill each bell pepper halve with ground beef mixture. Top each bell pepper with mayonnaise or cheese.
  5. Broil the bell peppers for 2-3 minutes, or until cheese is melted. Garnish with parsley and serve.
