Description

Mexican Stuffed Sweet Potatoes – An EASY, healthy meal for Mexican cuisine lovers! Sweet potatoes are stuffed with taco seasoned ground beef, and topped with flavorful toppings for a sweet and savory dinner. Whole30, and Paleo too!


Ingredients

To bake the sweet potatoes

  • 4 medium sweet potatoes
  • 1 teaspoons olive oil
  • 1 teaspoon kosher salt

For the taco meat

  • 1 tablespoon olive oil
  • 1/2 medium yellow onion
  • 1 pound ground beef
  • 1/2 cup water
  • 3 teaspoons chili powder
  • 2 teaspoons cumin
  • 1/2 teaspoons paprika
  • 1 teaspoons oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon red pepper

For the stuffing

  • 12 Roma tomatoes, diced
  • 1/2 red onion, diced
  • 1 jalapeno, diced
  • 12 ripe avocados, mashed
  • fresh cilantro, chopped
  • 1 lime, juiced

Instructions

  1. Preheat oven to 400 degrees Fahrenheit and line a rimmed baking sheet with parchment paper. Poke several holes in each sweet potato with a fork. Place sweet potatoes on baking sheet and drizzle with olive oil, then sprinkle on kosher salt. Rub the olive oil and salt over the entire potato. (If you are short on time, poke holes in the sweet potatoes and put them in the microwave. This will save you about 40 minutes).
  2. Bake the sweet potatoes for 40-45 minutes, or until a fork or knife can easily be inserted into the middle of the potato.
  3. Meanwhile, in a medium skillet, heat olive oil over medium-high heat. Sauté the diced onion for 4-5 minutes until soft and translucent. Add the ground beef to the skillet and using a spatula break the beef into smaller pieces. Cook the ground beef until no longer pink.
  4. Drain the excess fat, then add water and spices to the ground beef. Stir together and bring to a simmer. Simmer for 3-5 minutes or until little liquid remains in the skillet.
  5. Cut the sweet potatoes in half lengthwise and stuff with ground beef taco meat, diced tomatoes, diced onion, sliced jalapenos, and smashed avocado. Garnish with cilantro and a squeeze of lime juice.
