LET’S TALK INGREDIENTS
Just a few simple ingredients to make this microwave healthy mug brownie. I got all these baking staples from Thrive Market.

In a separate small bowl or ramekin, melt coconut oil and chocolate chips together in the microwave for 30 seconds. Whisk in vanilla, almond milk, and maple syrup.
Combine wet ingredients into dry ingredients and stir together until a brownie batter forms.
Cook in the microwave for 40 seconds to 1 minute (You may need to adjust cooking times based on microwave. I used a 1000 watt microwave.)
Let brownie cool for a minimum of 5 minutes.
TIPS AND VARIATIONS:
To double the recipe: double the recipe in two separate mugs. I do not recommend doubling in one single mug.
I recommend eating the brownie straight out of the mug with a spoon, since the brownie is crumbly and fudgy inside the mug.
Let the healhty mugbrownie cool for 3-5 minutes after taking it out of the microwave. It should look gooey and moist.
Add fun toppings: dairy-free ice cream, almond butter, peanut butter, raspberries, shredded coconut flakes, dairy-free whipped cream, or more dairy-free chocolate chips.
If you want to make more of a mug cake (you want the brownie to be less fudgy), add 1 whisked egg to the wet ingredients at the same time you add in the vanilla, almond milk, and maple syrup.
